Pregnancy Brain, but Good Endings...

Now I know I am tired and pregnant (like I needed any proof of either)... So tonight, I baked scones. It is one of my favorite things to bake and have on hand for the next days for breakfast. I decided I would be wise and make a double batch of dough and then freeze half for later.



So with my double batch of dough ready, I made half of them for this week. I put them on the pan. Then I went about cleaning up. Halfway through cleaning I realized that I didn't start the timer. So I stopped what I was doing and set the timer for a couple minutes less since I had been cleaning for a while.



Once I cleaned all my utensils, I looked around and was proud of what I had accomplished.



That is until I realized that the scones where still on the cookie sheet on top of the stove. Hmmm... I guess I should put them into the oven in order to cook them! Oh boy....





I didn't want to share this story without sharing this delightful recipe I got from a dear friend, Teddi. Enjoy!




Cranberry Orange Scones




6 Tbs cold butter


2 c flour


2 Tbs sugar


1 Tbs baking powder


1/2 tsp salt


1 Tbs grated orange rind


3/4 c dried cranberries


1 egg, lightly beaten


1/2 c milk




In a large bowl, mix flour, sugar, baking powder, and salt. With a pastry blender (I use the flat beater attachment my mixer stand), cut in butter until mixture resembles fine crumbs. Stir in orange rind and dried cranberries. Add egg and milk; mix until mixture clings together and forms soft dough. Turn out onto lightly floured surface and knead gently about 15 times. (I just switch out the attachment to the dough hook on my kitchen stand.) Divide dough into fourths and pat into squares about 1/2 inch thick. Cut each square diagonally twice to form 4 triangles. (I do another shortcut. I just roll dough into balls.) Place on lightly greased baking sheet (or freeze for future baking). Bake about 15 minutes or until lightly browned.




Glaze:


1 c powdered sugar


1-2 Tbs orange juice


1 tsp grated orange rind




In a small bowl, combine powdered sugar, orange juice, and orange rind to desired consistency. Spoon glaze over warm scones and let cool 5 minutes. Serve warm.
