It seems like everyones' garden is overflowing with ripe tomatoes. (I don't have a garden but hope to have one soon. Say, around my birthday. Hint, Hint Jeremy.) :)
As we have received tomatoes from other people's gardens, I have been trying to be creative with ways to use them.
The other night, I made what I call bruschetta chicken. First, I marinated chicken breasts in Italian dressing. Then, I cut up the tomatoes and put them in a bowl with fresh cut basil and olive oil.
(We have this fabulously flavored olive oil from a shop in Austin called Con' Olio. Here is the link to their EVOOs: http://www.conolios.com/index_files/Page719.htm We have the Tuscan Blend. That and their aged balsamic vinegar are totally worth the splurge!)
I took the chicken out of the marinade and grilled it on the stove top. Once it was done, I topped it with the tomato mixture and Ta Da! Dinner was served!
