Yum yum! So I discovered an easy meal that is just perfect for fall (and gearing up for Thanksgiving). It is a Cranberry Pork Tenderloin with Sweet Potatoes.
In a pan, rub a pork tenderloin with salt and pepper. Spread 1 can of cranberry sauce (I like the whole berry one for this, but it up to your preference) over the tenderloin. I also put some sage on top for extra flavor.
Wash and cover sweet potatoes in foil. Put in another pan or baking sheet (in case they ooze).
Put both in a 275 degree oven for about 2-3 hours or until done.
